| This six week rotation consisted of many different food service learning experiences. I had the opportunity to work in two different restaurants, Seasons Restaurant and the Wye Oak Pub. Not only did I have the chance to work in the front of the restaurants, I also had the chance to work in the back of the operation. There are many different things that must be accomplished to continually provide a great dining experience for the residents at Riderwood. Some of these that I learned about include: |
- Preparing and Cooking food
- Ordering and receiving food
- Stocking and inspecting inventory
- Continual cleaning
- and serving the food

| Theme Meal |
| My fellow intern, Cindy Francis and I had the privilege to develop and execute a theme meal for roughly 100 residents. We were 100% responsible for every aspect of this meal. Some of the steps in the process: |

- Conducting nutrient analysis of all recipes items.
|
- Creating a marketing plan and all marketing materials.
|
- Constructing a production schedule.
|
- Preparing as many of the recipes ahead of time. Those items that could not be prepared ahead of time were prepared the day of the event.
|
- Setting up the Wye Oak Pub, including decorations, table arrangements and discussing event with serving staff.
